Foodie Monday: Dijon Mushroom Beef

Hi friends,

Wowza, did I just have a big weekend and I needed a delicious, easy meal recipe to end it off just right, something I could cook simply and quickly after some time out of the house.

I got this amazing recipe from my friend, Laurel, tried it out and it was just lovely.  Even the boys thought so!  Just a note – if you have growing boys like me, or a husband/wife who likes to take leftovers to work for lunch the next day, double it!

 

Dijon Mushroom Beef

 

½ lb mushrooms, sliced

I medium onion, sliced

2 tsp olive oil

1 lb boneless beef sirloin steak, thinly sliced

1 can cream of mushroom soup

½ cup milk

2 tbsp Dijon Mustard

 

 

In a large non-stick skillet, sauté mushrooms and onion in oil until tender. Remove and set aside. In the same skillet, cook beef until no longer pink. Add soup, milk, mustard and mushroom mixture. Bring to a boil. Reduce heat, stir until thickened.

 

Serve over rice or noodles.

 

Yield: 4 servings
