Foodie Monday: Turkey leftovers? My favourite recipe for eating those up!

Hi friends,

Here’s my favourite recipe for eating up any leftover turkey you might have hanging around your house this week, post Thanksgiving – this can also be made with chicken –

Sweet & Spicy Wraps

– 1/2 c. mayo

– 1/4 c. chopped cucumber

– 1 tbsp. honey

– 1/2 tsp each cayenne pepper, black pepper, salt

– 3 cups leftover turkey (or chicken) – chopped finely

– 1 c. salsa

– 1 tbsp. honey

– 2 tsp. smoked paprika

– 6 flour tortillas

– Mix together mayo, cucumber, honey and spices in a small bowl, set aside.

– Mix together turkey, salsa, 1 tbsp honey in a frying pan, cook on med-low for 5 minutes.  Spread each tortilla with each mixture (about 1/2 c. of turkey mix and a good smear of the sauce) and roll.  Enjoy!
