Foodie Monday: Pork Fried Rice

Hi friends,

Here’s a favourite leftover recipe in our household: Pork fried rice!

– 1-2 cups leftover pork (I’ve used chops, pork tenderloin and pork roast too), chopped

– 1 onion, chopped

– 1/2 c. oil

– 2-3 cups cooked rice

– 1 c. chicken broth

– 1 tsp. each salt, pepper, ground ginger, and garlic powder

– 1/2 c. honey garlic or hoisin sauce

– 1/2 c. soya sauce

– 3 green onions, chopped

– 2 eggs

Saute pork and onions in oil for 3-5 minutes.  Add rice and chicken broth, cook for 5 minutes until chicken broth gets sucked up into the rice.

Add all other ingredients and stir, then make a hole in the centre of your pan, crack the eggs into the centre and scramble, mix with the rest of the rice.  Serve hot with extra soya sauce if desired.
