Foodie Monday: Coca Cola Roast Beef

Hi friends,

Here’s a recipe adapted from my new birthday cookbook from my friend Michelle, Classic Cooking with Coca Cola by Elizabeth Candler Graham – it is so cool that I just had to try & post a recipe.

Coca Cola Roast

1 beef roast (bottom round, chuck or other less tender cut)

12 oz. Coca Cola

1 package dry onion soup mix

Place the unseasoned roast in a baking dish.  Sprinkle the onion soup mix over the roast.  Pour in the Coca Cola.  Cover and seal tightly with aluminum foil.  Place in the oven and cook at 300 degrees until tender.  Time will vary with size of roast.  A 4 lb roast will take 3 1/2-4 hours.

That’s it – easy and delicious!

  1. It was delicious! And so tender – and weird side effect of the Coke – the pan was super clean and easy to scrub out! And the same book has a recipe for ham – 1.5 c. brown sugar, 2 tsp. dry mustard, 1/2 c. breadcrumbs and 12 ounces Coke, mix all and bake as usual, basting with liquid. I’ll let you know when I try it 🙂
