Foodie Monday: Bacon Cheeseburger Meatloaf

Hi friends,

Here’s a family favourite recipe, Nicholas’ very best recipe to make for dinner at home – if you haven’t yet, I encourage you to let your kids cook in the kitchen with you, and let them take the lead over time.  Nick’s been making this recipe on his own since he was 10 years old.

Bacon Cheeseburger Meatloaf:

– 2 lbs. ground beef

– 1/2 c. chopped onion

– 3/4 c. bread crumbs

– 2 eggs, lightly beaten

– 1 tsp. each salt and pepper

– 1 c. shredded cheddar cheese

– 6 strips bacon

Preheat oven to 350 degrees, mix all ingredients in a bowl except for the cheese and bacon.

Grease loaf pan, fill 2/3 full and make a well in the middle.  Fill the well with cheese and top with remaining meat mixture.  Layer the top of the loaf with bacon.  Bake 50 minutes.  Cool 15 minutes & serve.
