Foodie Monday: Fully Loaded Baked Potato Salad

Hi friends,

Here’s a great recipe that our family loves, easy to make and take to holiday potlucks and parties as a side dish.

Fully Loaded Baked Potato Salad

– 8 medium potatoes

– 1 c. sour cream

– 1/2 c. mayo

– 1 pkg. bacon, cooked and crumbled

– 1 small onion, chopped

– 6 chives, chopped

– 1.5 c. shredded cheddar cheese

– salt and pepper to taste

Wash and cut potatoes into cubes.  Cover with water and boil until fork tender, about 20 minutes, do not overcook or you will have mashed potatoes!  Drain and cool in the fridge.  When cool to the touch, add all ingredients and mix well.  Top with shredded cheese & bacon.  Enjoy!
