Here’s a great biscuit recipe to fill in the cracks at any meal. My boys absolutely love these.
Loaded Biscuits: Ingredients:
– 2 c. all-purpose flour
– 1 tbsp. baking powder
– 1/2 tsp. salt
– 1/3 c. butter
– 3/4 c. cold buttermilk (can also use regular milk)
– 1/2 c. sour cream
– 2/3 c. chopped cooked bacon or bacon bits
– 2/3 c. shredded Cheddar cheese
– 1/3 c. finely chopped chives
– 1/3 c. finely chopped green pepper
Mix the flour, baking powder and salt in a bowl. Cut in the shortening with a pastry blender or kitchen knives until the mixture resembles coarse crumbs. Add the buttermilk, sour cream, bacon, cheese, green pepper and chives and mix just until moistened. Drop by heaping tablespoonfuls onto a lightly greased baking sheet. Bake in a preheated 425F oven for 12 minutes or until light brown.
Biscuit making notes from Bobby Flay: Ensure your milk and butter are fridge cold when you use them, if they are, your biscuits will be lighter. Also, when you mix the biscuits, don’t overwork it. Make sure the flour is mixed in, but just barely.
