Foodie Monday: Mike’s Weeknight Salmon

Hi friends, Here’s a delicious recipe from the illustrious chef Mike, seriously elegant weekday food:

Mike’s Weeknight Salmon:

– 1 Salmon deboned fillet. freshly cut into 4-6 ounce portions


– 1 c. extra virgin or canola olive oil

– 1/2 c. Honey or Maple Syrup (extra sweet)

– 1/2 c. soya sauce

Optional – 1 tbsp. minced garlic

Immerse the salmon into the marinade and let rest for at least 2 hours. Bake in the the oven at 350 degrees for 13-15 minutes.  Salmon is done when it flakes easily with a fork. Salt & Pepper to taste.  Be light on the salt as the soya sauce has plenty.  This was served with Saffron Rice & Cumin Vegetables. Amy
