Here’s a recipe that I test drove last week, it was a big hit with the family.
Coca Cola Garlic Beef – from Classic Cooking With Coca Cola by Elizabeth Candler Graham (pg. 51)
– 4 lbs. beef (I used a beef chuck roast)
– 4 tsp. minced garlic
– 1 stick butter
– 2 c. Coca Cola, divided
– 1/4 c. water
– Salt and pepper
Cut the meat into 2 inch cubes. Season with salt and pepper and garlic, mix up and marinade for a few hours.
Brown the meat in the butter in a skillet. Transfer to a casserole dish and add water and 1 c. Coca Cola. Bake in a preheated 350 degree oven for 45 minutes. Add remaining Coca Cola and cook another 15 minutes. Serve on a bed of rice.
This freezes well.
