Foodie Monday: Crockpot summer chicken noodle soup

Hi friends,

Another summer crockpot recipe for you to try out at the cabin, the trailer or the house!

Crockpot Summer Chicken Noodle Soup:

– 3-4 chicken breasts (I usually use frozen ones since I forgot to take them out the night before)

– 1.5 c. chopped carrots

– 3 stalks celery, chopped

– 1 med. yellow onion, chopped

– 3 tbsps. minced garlic

– 3 tbsp. olive oil

– 8 c. chicken broth

– 1 c. water and 3 tbsps. chicken base (or bouillon)

– 1 tbsp. each – thyme, rosemary, celery seed, chicken seasoning, salt and pepper

– 2 c. broad egg noodles

– 1 tbsp. lemon juice

Add whole chicken breasts, diced carrots, onion, celery and garlic to your crockpot,  drizzle with olive oil. Cover with broth, water, chicken base, and spices.  Stir, and cover and cook on low for 6-7 hours.

Remove cooked chicken onto a cutting board, allow to rest for 10 minutes, then dice into bite sized pieces.  Meanwhile, add noodles.  Increase crockpot heat to high, cover and cook for 10 minutes.

Stir in diced chicken, lemon juice, stir and serve.



Foodie Monday: Crockpot summer chilli

Hi friends,

Here’s a chilli recipe that you can leave sit in your crockpot all day!

Crockpot Summer Chilli:

– 1 lb. ground beef

– 1 yellow onion, chopped

– 2 tsp. minced garlic

– 1 each red and green peppers, chopped

– 1 28 oz. can chopped tomatoes

– 1 can mushroom pieces & stems

– 1 can kidney beans (I use white sometimes)

– 1 can brown beans in tomato sauce

– 1 c. ketchup

– 1 tsp each: soya sauce, BBQ sauce, Worcestershire sauce, liquid smoke, salt, pepper, oregano, thyme, chipotle and chilli powder to taste.

Brown the beef in a pan with chopped onions, peppers and garlic.  Drain off fat and throw into crockpot.

Put everything else in the crockpot and stir.  Cook on low for 6-8 hours.
Serve with sour cream, shredded cheese, chopped onions – whatever your favourite toppings are.  Leftovers are great over hotdogs or burgers.



Foodie Monday: Crockpot summer ribs

Here’s my favourite summer ribs recipe – Lucy, my crockpot takes care of it!

Crockpot Summer Ribs:

– 3-4 lbs. pork back ribs, cut into hand size sections

– 1 tsp. each salt, pepper, paprika, celery seed, and cumin

– 1 bottle of your favourite BBQ sauce

After cutting your ribs into sections, add all spices into a medium bowl, and rub down each rib with the spices.  Arrange in the crockpot and pour BBQ sauce over top.  Cook on low for 6-8 hours.

Done and yum!



Foodie Monday: Crockpot summer ham

The crockpot is our summer dinner making friend since it doesn’t heat up the kitchen.

Here’s my favourite recipe for Crockpot Summer Ham:

1 ham, I like the fully cooked half hams from the grocery store

– 1/2 c. Dijon mustard

– 1 c. Brown sugar

– 1 tsp. cinnamon

– 1/4 c. honey

– 1 tsp. garlic powder

– 1 tsp. black pepper

– 1 tsp. salt

Mix all glaze ingredients with a fork in a mixing bowl, and then rub over the ham, cook in crockpot on low for 4 hours.



Foodie Monday: Crockpot Meatballs & Gravy

From the Wroblewsky vault, here’s a super easy weekday recipe, this is one of the first dinners my boys learned to put together.

Crockpot meatballs & gravy

– 2 lbs. frozen, pre-cooked meatballs (I like the angus ones from Superstore)

– 1 can cream of mushroom soup

– 1 c. water

– 1 pkg. turkey gravy mix

Place meatballs in crockpot, add all other ingredients to a bowl and mix well, pour over meatballs.  Cook on low for 6-8 hours or high for 3 hours.



Foodie Monday: Slow cooker chicken enchiladas

Hi friends,

Here’s an easy weeknight meal for you to try out, it’s been a hit around my house!

Slow Cooker Chicken Enchiladas:
– 3-4 frozen chicken breasts

– 1 package taco seasoning

– 1 can drained black beans

– 1 can drained diced tomatoes, or 1 small jar salsa

– 1 can drained niblet corn

– 1/2 brick cream cheese, cubed

Combine the ingredients above, except for the cream cheese, in your slow cooker, season with salt & pepper.  Cook on low for 6-8 hours.  Shred chicken with 2 forks, add cream cheese and stir until melted.  Serve in soft tortillas with additional tomatoes, lettuce and cheese if desired.  Yum!
